Serves 2
INGREDIENTS
2 ripe avocados
4 slices of good quality sourdough bread
Pinch of salt
Pinch of fresh black pepper
2 pinches of Aleppo chilli
4 finely chopped chives or 1 spring onion
Juice of 1 fresh lemon or lime
1 tbs extra virgin olive oil
METHOD
Roughly dice the avocado into 2cm cubes. In a large mixing bowl add the diced avocado, salt, pepper & lemon (or lime juice). Combine ingredients together with a fork, lightly smashing the avocado – the secret is to not over smash the avocado and keep it chunky.
In the meantime, toast the sourdough slices (we like to use charcoal sourdough – it’s got a great texture and is good for digestion).
Once toasted, generously spread the avocado mixture on top of each slice and finish by sprinkling with the chopped chives (or spring onion), a good drizzle of extra virgin olive oil and a pinch of Aleppo chilli. We love Aleppo chilli as it has a great nutty flavour but you could use dried chilli flakes or finely diced fresh chilli.
Serve as is or add poached eggs and a sprinkling of feta (we love Graceburn as it’s got that lovely lemony zing and indulgent creaminess to it). If you really want to push the boat out add some crispy bacon or good quality oak smoked salmon.
