6b/100) MARS BAR CHEESECAKE RECIPE

Here it is, the original recipe I grew up with in Ballarat for you to enjoy now at home.

INGREDIENTS ~ 250g Oreo biscuits
150g melted butter
500g soft cream cheese
300ml whipping cream
110g (1/2 cup) caster sugar
3 teaspoons gelatine, dissolved in 60m hot water
5 x full size Mars Bars (roughly chopped)
30g cocoa powder

METHOD ~ Blend or process biscuits until mixture resembles fine breadcrumbs.
Add butter and process until just combined.
Press biscuit mixture evenly over base of 20cm springform tin. Refrigerate about 30 minutes or until firm.
Beat cream cheese and caster sugar in a medium bowl with an electric mixer until smooth. In a separate bowl, whip thickened cream until soft peaks form.
Stir gelatine mixture into cream cheese mixture with chopped Mars Bars. Fold in cream.
Pour mixture into crumb crust. Decorate with cocoa powder. Refrigerate for 3 hours or until set.
